- 2 chicken breasts, no skin, no bone
- 6 roma tomatoes
- 1 tbsp olive oil
- 1/2 tbsp herb mix (preferably Penzey’s ‘Mural of Flavor’)
- 1 tsp garlic powder
- 3 cloves
- 2 bay leaves
- To taste pepper
- 1 cup white cooking wine
- 1/2 cup peach flavored wine cooler
Instructions
- Heat olive oil in a skillet over medium heat.
- Add the chicken breasts and brown lightly on both sides.
- Chop roma tomatoes and add to the skillet.
- Stir in herb mix, garlic powder, cloves, bay leaves, and pepper.
- Pour in white cooking wine and peach flavored wine cooler.
- Reduce heat, cover, and simmer for about 30 minutes or until chicken is fully cooked and flavors are well combined.
- Remove bay leaves and cloves before serving.
Notes
Serve with rice or crusty bread to soak up the flavorful sauce. Adjust seasoning as needed.
