Ingredients

  • 100g (4oz) butter, softened
  • 175g (6oz) caster sugar
  • 2 eggs
  • 2 ripe bananas, mashed
  • 225g (8oz) self-raising flour
  • 1 tsp baking powder
  • 2 tbsp milk

Instructions

  1. Preheat the oven to 180°C (350°F). Grease a 9×5-inch loaf pan and set aside.
  2. In a large mixing bowl, cream the butter and sugar until light and fluffy.
  3. In a separate bowl, whisk together the flour and baking powder.
  4. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

Notes

Tips: Use very ripe bananas for the best flavor. You can also add nuts or chocolate chips for added texture and flavor. Store the cake in an airtight container at room temperature for up to 3 days.
