Description
These easy canned salmon patties are crispy on the outside, tender on the inside, and packed with flavor. A perfect quick meal idea made with pantry staples.

			- 2 cans (14.75 oz) pink salmon, drained and flaked
- 2 large eggs
- 1/3 cup breadcrumbs
- 1/4 cup finely chopped onion
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- 2 tablespoons chopped parsley
- Salt and pepper to taste
- 2 tablespoons olive oil (for frying)
Instructions
- In a large bowl, combine salmon, eggs, breadcrumbs, onion, mustard, lemon juice, parsley, salt, and pepper.
- Mix well until the mixture holds together.
- Form into 6–8 patties.
- Heat olive oil in a skillet over medium heat.
- Cook patties for 3–4 minutes per side until golden and crispy.
- Serve hot with your favorite sauce or a squeeze of lemon.
Notes
You can refrigerate the patties for 30 minutes before frying to help them hold shape better. Serve with salad, rice, or inside a sandwich bun for a quick meal.
