Description

These easy canned salmon patties are crispy on the outside, tender on the inside, and packed with flavor. A perfect quick meal idea made with pantry staples.


Ingredients

  • 2 cans (14.75 oz) pink salmon, drained and flaked
  • 2 large eggs
  • 1/3 cup breadcrumbs
  • 1/4 cup finely chopped onion
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 2 tablespoons chopped parsley
  • Salt and pepper to taste
  • 2 tablespoons olive oil (for frying)

Instructions

  1. In a large bowl, combine salmon, eggs, breadcrumbs, onion, mustard, lemon juice, parsley, salt, and pepper.
  2. Mix well until the mixture holds together.
  3. Form into 6–8 patties.
  4. Heat olive oil in a skillet over medium heat.
  5. Cook patties for 3–4 minutes per side until golden and crispy.
  6. Serve hot with your favorite sauce or a squeeze of lemon.

Notes

You can refrigerate the patties for 30 minutes before frying to help them hold shape better. Serve with salad, rice, or inside a sandwich bun for a quick meal.
