- 2 1/4 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon ground nutmeg
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 cup eggnog
- 1 teaspoon vanilla extract
- For the glaze: 1 cup powdered sugar, 2–3 tablespoons eggnog, pinch of nutmeg
Instructions
- Preheat oven to 175°C (350°F). Grease and flour a 9×5-inch loaf pan.
- In a bowl, whisk together flour, baking powder, salt, and nutmeg.
- In another large bowl, cream butter and sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition.
- Mix in eggnog and vanilla extract.
- Gradually add the dry ingredients to the wet mixture and stir until just combined.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 45–55 minutes or until a toothpick inserted in the center comes out clean.
- Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Mix glaze ingredients and drizzle over cooled bread before serving.
Notes
This bread stays moist for days and can be wrapped and frozen. Use full-fat eggnog for best flavor and texture.
