Description

A hearty, comforting cowboy cornbread casserole loaded with seasoned beef, beans, corn, and topped with golden cheesy cornbread – the perfect one-dish family dinner!


Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 cup shredded cheddar cheese
  • 1 box (8.5 oz) cornbread mix
  • 1/3 cup milk (for cornbread mix)
  • 1 egg (for cornbread mix)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, cook ground beef over medium heat until browned. Drain excess fat.
  3. Add taco seasoning, black beans, corn, and diced tomatoes to the skillet. Stir and simmer for 5 minutes.
  4. Pour mixture into a greased 9×9-inch baking dish.
  5. Sprinkle shredded cheddar cheese over the meat mixture.
  6. In a bowl, prepare cornbread mix with milk and egg according to package directions.
  7. Spread cornbread batter evenly over the cheese layer.
  8. Bake for 25–30 minutes, or until cornbread is golden and cooked through.
  9. Let cool for 5 minutes before serving.

Notes

For extra spice, add jalapeños or use pepper jack cheese. Great with a dollop of sour cream or guacamole on top!
