Description
A hearty, comforting cowboy cornbread casserole loaded with seasoned beef, beans, corn, and topped with golden cheesy cornbread – the perfect one-dish family dinner!

- 1 lb ground beef
- 1 packet taco seasoning
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 1 cup shredded cheddar cheese
- 1 box (8.5 oz) cornbread mix
- 1/3 cup milk (for cornbread mix)
- 1 egg (for cornbread mix)
Instructions
- Preheat oven to 375°F (190°C).
- In a large skillet, cook ground beef over medium heat until browned. Drain excess fat.
- Add taco seasoning, black beans, corn, and diced tomatoes to the skillet. Stir and simmer for 5 minutes.
- Pour mixture into a greased 9×9-inch baking dish.
- Sprinkle shredded cheddar cheese over the meat mixture.
- In a bowl, prepare cornbread mix with milk and egg according to package directions.
- Spread cornbread batter evenly over the cheese layer.
- Bake for 25–30 minutes, or until cornbread is golden and cooked through.
- Let cool for 5 minutes before serving.
Notes
For extra spice, add jalapeños or use pepper jack cheese. Great with a dollop of sour cream or guacamole on top!
