An easy and comforting cream of asparagus soup made with simple ingredients, smooth texture, and fresh flavor, perfect for a light meal or starter.

- 2 tablespoons butter
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 500g fresh asparagus, trimmed and chopped
- 750ml vegetable broth
- 200ml heavy cream
- Salt to taste
- Black pepper to taste
- Fresh parsley or chives for garnish
Instructions
- Heat the butter and olive oil in a large pot over medium heat.
- Add the onion and sauté until soft and translucent.
- Stir in the garlic and cook until fragrant.
- Add the asparagus and cook for 3–4 minutes.
- Pour in the vegetable broth and bring to a boil.
- Reduce heat and simmer for 15 minutes until asparagus is tender.
- Blend the soup until smooth using an immersion blender.
- Stir in the cream and season with salt and black pepper.
- Heat gently and serve garnished with fresh herbs.
Notes
For a lighter version, substitute cream with milk or half-and-half.
