Description

An easy and comforting cream of asparagus soup made with simple ingredients, smooth texture, and fresh flavor, perfect for a light meal or starter.


Ingredients

  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 500g fresh asparagus, trimmed and chopped
  • 750ml vegetable broth
  • 200ml heavy cream
  • Salt to taste
  • Black pepper to taste
  • Fresh parsley or chives for garnish

Instructions

  1. Heat the butter and olive oil in a large pot over medium heat.
  2. Add the onion and sauté until soft and translucent.
  3. Stir in the garlic and cook until fragrant.
  4. Add the asparagus and cook for 3–4 minutes.
  5. Pour in the vegetable broth and bring to a boil.
  6. Reduce heat and simmer for 15 minutes until asparagus is tender.
  7. Blend the soup until smooth using an immersion blender.
  8. Stir in the cream and season with salt and black pepper.
  9. Heat gently and serve garnished with fresh herbs.

Notes

For a lighter version, substitute cream with milk or half-and-half.
