- 800g stewing beef, cut into chunks
- 3 carrots, sliced
- 3 potatoes, diced
- 2 celery stalks, chopped
- 1 onion, chopped
- 3 garlic cloves, minced
- 2 tbsp tomato paste
- 2 tbsp Worcestershire sauce
- 750ml beef broth
- 1 tsp dried thyme
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp cornstarch
- 2 tbsp water
- 2 tbsp olive oil
Instructions
- Heat olive oil in a skillet over medium-high heat. Brown the beef in batches for 2-3 minutes per side.
- Transfer browned beef to the crock pot.
- Add carrots, potatoes, celery, onion, garlic, tomato paste, Worcestershire sauce, beef broth, thyme, salt, and pepper.
- Stir to combine, cover, and cook on low for 8 hours or on high for 4-5 hours until beef and vegetables are tender.
- In a small bowl, mix cornstarch with water. Stir into the stew and cook for another 15 minutes to thicken.
- Serve warm, garnished with fresh parsley if desired.
Notes
For deeper flavor, sear the beef before slow cooking. Leftovers taste even better the next day.
