Ingredients

  • 800g stewing beef, cut into chunks
  • 3 carrots, sliced
  • 3 potatoes, diced
  • 2 celery stalks, chopped
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 2 tbsp tomato paste
  • 2 tbsp Worcestershire sauce
  • 750ml beef broth
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp cornstarch
  • 2 tbsp water
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Brown the beef in batches for 2-3 minutes per side.
  2. Transfer browned beef to the crock pot.
  3. Add carrots, potatoes, celery, onion, garlic, tomato paste, Worcestershire sauce, beef broth, thyme, salt, and pepper.
  4. Stir to combine, cover, and cook on low for 8 hours or on high for 4-5 hours until beef and vegetables are tender.
  5. In a small bowl, mix cornstarch with water. Stir into the stew and cook for another 15 minutes to thicken.
  6. Serve warm, garnished with fresh parsley if desired.

Notes

For deeper flavor, sear the beef before slow cooking. Leftovers taste even better the next day.
