- 1 lb beef stew meat, cubed
- 3 carrots, sliced
- 3 potatoes, peeled and diced
- 2 celery stalks, chopped
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 cup green beans (fresh or frozen)
- 1 cup corn kernels (fresh, frozen, or canned)
- 6 cups beef broth
- 1 tsp dried basil
- 1 tsp dried oregano
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Place beef, carrots, potatoes, celery, onion, and garlic into the Crock Pot.
- Add diced tomatoes, green beans, corn, and beef broth.
- Stir in basil, oregano, bay leaf, salt, and pepper.
- Cover and cook on low for 8–10 hours or high for 4–5 hours, until beef is tender and vegetables are cooked through.
- Remove bay leaf before serving.
- Serve hot and enjoy!
Notes
You can brown the beef before adding for extra flavor. Feel free to swap in your favorite veggies or use frozen mixed vegetables for convenience.
