- 1 cup full fat cottage cheese
- 2 cooked chicken breasts (about 14 oz)
- 1/3 cup buffalo sauce
- 1/4 tsp salt
- 1/8 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1 cup shredded cheese (cheddar/mozzarella blend)
- 1/4 cup diced green onions (for garnish)
- Chips and/or sliced veggies for serving
Instructions
- Preheat oven to 375°F (190°C).
- Blend cottage cheese in food processor until smooth.
- Shred cooked chicken and mix with buffalo sauce.
- Combine seasoned chicken, blended cottage cheese, salt, pepper, garlic powder, and onion powder.
- Fold in 3/4 cup shredded cheese and transfer mixture to oven-safe dish.
- Top with remaining cheese and bake for 18-20 minutes until bubbly.
- Garnish with green onions and serve warm with veggies or chips.
Notes
Tips: Greek yogurt can substitute cottage cheese. For extra spice, add 1/4 tsp cayenne pepper. Storage: Keep refrigerated up to 4 days. Reheat in oven for best texture.
