- 3 large firm ripe pears, or 4 small (Bosc or Barlett), peeled and cut into pieces
- 2 cups all-purpose flour, 240 g
- 3 teaspoons baking powder, 14 g
- ¾ teaspoon kosher salt
- 1 ¼ cup granulated sugar, 200 g
- 1 cup whole milk yogurt
- ½ cup butter, 113 g, melted and cooled
- 2 large eggs, room temperature
- ½ teaspoon vanilla extract, 2g
- Confectioner sugar for dusting
- Freshly whipped heavy cream, if desired
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan and set it aside.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large bowl, use an electric mixer to beat the sugar and eggs until light and fluffy, about 2 minutes.
- Beat in the melted butter and vanilla extract until well combined.
- Gradually add the flour mixture to the wet ingredients, alternating with the yogurt, beginning and ending with the flour mixture. Beat just until combined.
- Gently fold in the pear pieces.
- Pour the batter into the prepared cake pan and smooth the top.
- Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
- Dust with confectioner’s sugar and serve with whipped cream if desired.
Notes
For the best results, use firm but ripe pears. If you don’t have whole milk yogurt, you can substitute with low-fat or nonfat yogurt. Store leftovers at room temperature for up to 3 days or wrap tightly and freeze for up to 2 months.
