Description

A quick and satisfying one-skillet meal with seasoned ground beef, rice, beans, and cheese — all the delicious flavors of a burrito without the extra mess.


Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 cup uncooked instant rice
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (10 oz) can diced tomatoes with green chilies, undrained
  • 1 cup shredded cheddar cheese
  • 1 cup water or beef broth
  • Salt and pepper to taste
  • Optional toppings: sour cream, green onions, avocado, cilantro

Instructions

  1. In a large skillet over medium heat, cook ground beef and diced onion until beef is browned and onion is soft. Drain excess fat.
  2. Add garlic and taco seasoning; stir to combine.
  3. Stir in rice, black beans, diced tomatoes with green chilies, and water or broth. Bring to a simmer.
  4. Cover and cook for 10–12 minutes, or until rice is tender and liquid is absorbed.
  5. Remove from heat and sprinkle cheese over the top. Cover again for 2–3 minutes until cheese melts.
  6. Serve hot with your favorite toppings.

Notes

For a spicier version, use hot diced tomatoes or add a dash of hot sauce. This dish also makes a great burrito filling or meal prep option.
