A quick and satisfying one-skillet meal with seasoned ground beef, rice, beans, and cheese — all the delicious flavors of a burrito without the extra mess.

- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning
- 1 cup uncooked instant rice
- 1 (15 oz) can black beans, drained and rinsed
- 1 (10 oz) can diced tomatoes with green chilies, undrained
- 1 cup shredded cheddar cheese
- 1 cup water or beef broth
- Salt and pepper to taste
- Optional toppings: sour cream, green onions, avocado, cilantro
Instructions
- In a large skillet over medium heat, cook ground beef and diced onion until beef is browned and onion is soft. Drain excess fat.
- Add garlic and taco seasoning; stir to combine.
- Stir in rice, black beans, diced tomatoes with green chilies, and water or broth. Bring to a simmer.
- Cover and cook for 10–12 minutes, or until rice is tender and liquid is absorbed.
- Remove from heat and sprinkle cheese over the top. Cover again for 2–3 minutes until cheese melts.
- Serve hot with your favorite toppings.
Notes
For a spicier version, use hot diced tomatoes or add a dash of hot sauce. This dish also makes a great burrito filling or meal prep option.
