Ingredients

  • 4 cups diced tomatoes
  • 2 cups diced chile peppers (choose according to your heat preference)
  • 2 cups diced red onion
  • 57 cloves garlic, minced
  • 1 1/2 cup distilled white vinegar
  • 1 cup bottled lime juice
  • 12 tablespoons chile pepper flakes (to taste)
  • 1 tablespoon sea salt

Instructions

  1. Prepare all ingredients by dicing peaches, tomatoes, peppers, and onion; mince garlic.
  2. Combine all ingredients in a large pot over medium heat.
  3. Bring the mixture to a boil, then reduce heat and simmer for 5-10 minutes.
  4. Fill sterilized canning jars with hot salsa, leaving 1/2-inch headspace.
  5. Wipe rims, apply lids, and process in a boiling water bath for 15 minutes (adjusting for altitude if needed).
  6. Remove jars and let cool. Ensure seals are tight before storing.
