Ingredients
- 16 oz bag frozen organic peas thawed
- 2 teaspoon – coconut oil
- 1 teaspoon – sea salt
Instructions
- Preheat oven to 400°F (200°C).
- In a medium bowl, toss the thawed green peas with coconut oil and sea salt until evenly coated.
- Spread the peas in a single layer on a baking sheet.
- Roast for 12-15 minutes, or until the peas are bright green and slightly crispy. Stir halfway through.

Notes
For an extra burst of flavor, add a pinch of red pepper flakes. You can substitute olive oil for coconut oil if preferred. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. These also freeze well!
