Description

Colorful, caramelized, and full of flavor—these Easy Roasted Vegetables are the perfect side dish for any meal, ready in under an hour.


Ingredients

  • 2 carrots, peeled and sliced
  • 1 red bell pepper, chopped
  • 1 zucchini, sliced
  • 1 red onion, cut into wedges
  • 1 cup broccoli florets
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and black pepper to taste

Instructions

  1. Preheat oven to 425°F (220°C) and line a large baking sheet with parchment paper.
  2. Place all chopped vegetables in a large mixing bowl.
  3. Drizzle with olive oil and sprinkle with garlic powder, Italian seasoning, salt, and pepper.
  4. Toss well to coat all vegetables evenly.
  5. Spread vegetables out in a single layer on the baking sheet.
  6. Roast for 25–30 minutes, stirring halfway through, until tender and slightly crisp on the edges.
  7. Serve warm as a side dish or toss into grain bowls, salads, or pasta.

Notes

Use whatever vegetables you have on hand—sweet potatoes, Brussels sprouts, or mushrooms work great too. Double the recipe for meal prep!
