These easy salmon patties are crispy on the outside, tender on the inside, and packed with flavor — perfect for a quick weeknight dinner or a hearty lunch.

- 1 (14.75 oz) can salmon, drained and flaked
- 1/2 cup breadcrumbs
- 2 eggs, beaten
- 1/4 cup finely chopped onion
- 1/4 cup chopped parsley
- 1 tablespoon lemon juice
- 1/2 teaspoon garlic powder
- Salt and pepper, to taste
- 2 tablespoons olive oil (for frying)
Instructions
- In a large bowl, combine the salmon, breadcrumbs, eggs, onion, parsley, lemon juice, garlic powder, salt, and pepper.
- Mix until all ingredients are well combined.
- Form the mixture into 6-8 patties.
- Heat olive oil in a skillet over medium heat.
- Fry the patties for about 3-4 minutes on each side, or until golden brown and crispy.
- Remove from skillet and drain on paper towels.
- Serve warm with your favorite sauce or side dish.
Notes
For extra crispiness, chill the patties for 15 minutes before frying. Serve with tartar sauce or a squeeze of lemon.
