Easy Sheet Pan Salmon

Description

A quick and healthy salmon dinner made entirely on one sheet pan with roasted vegetables and a zesty garlic butter sauce.


Ingredients

Scale
  • 4 salmon fillets (skin-on or skinless)
  • 1 lb baby potatoes, halved
  • 1 cup cherry tomatoes
  • 1 cup broccoli florets
  • 3 tbsp olive oil
  • 3 cloves garlic, minced
  • 2 tbsp fresh lemon juice
  • 1 tsp paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Line a large baking sheet with parchment paper or foil.
  3. In a bowl, toss potatoes with 1 tbsp olive oil, salt, and pepper. Spread them on the sheet pan and roast for 15 minutes.
  4. While potatoes roast, mix remaining olive oil, garlic, lemon juice, paprika, salt, and pepper in a small bowl.
  5. Remove sheet pan from oven, push potatoes to one side. Add salmon fillets and arrange broccoli and cherry tomatoes around them.
  6. Drizzle garlic lemon mixture over salmon and vegetables.
  7. Return pan to oven and roast for another 12–15 minutes, until salmon is cooked through and vegetables are tender.
  8. Garnish with fresh parsley before serving.

Notes

For extra flavor, marinate the salmon in the garlic lemon mixture for 15 minutes before baking.
