A simplified take on the classic French dish—this easy slow cooker beef bourguignon is rich, flavorful, and melt-in-your-mouth tender with minimal effort.

- 1 kg beef chuck, cut into large cubes
- 2 tablespoons olive oil
- 3 carrots, sliced
- 1 onion, diced
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 2 cups red wine
- 2 cups beef broth
- 1 teaspoon dried thyme
- 1 bay leaf
- 200g mushrooms, halved
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a skillet over medium-high heat. Sear the beef in batches until browned on all sides. Transfer to slow cooker.
- In the same skillet, sauté onions, garlic, and carrots for 3-4 minutes. Add tomato paste and cook for 1 minute. Transfer to slow cooker.
- Pour in red wine and beef broth. Add thyme, bay leaf, salt, and pepper. Stir gently to combine.
- Cover and cook on low for 8 hours or high for 4-5 hours until beef is tender.
- In the last hour of cooking, add the mushrooms.
- Discard bay leaf, garnish with chopped parsley, and serve hot with mashed potatoes or crusty bread.
Notes
For a thicker sauce, mix 1 tablespoon cornstarch with 2 tablespoons water and stir in during the last 30 minutes of cooking.
