Description

A simplified take on the classic French dish—this easy slow cooker beef bourguignon is rich, flavorful, and melt-in-your-mouth tender with minimal effort.


Ingredients

  • 1 kg beef chuck, cut into large cubes
  • 2 tablespoons olive oil
  • 3 carrots, sliced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 2 cups red wine
  • 2 cups beef broth
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 200g mushrooms, halved
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Sear the beef in batches until browned on all sides. Transfer to slow cooker.
  2. In the same skillet, sauté onions, garlic, and carrots for 3-4 minutes. Add tomato paste and cook for 1 minute. Transfer to slow cooker.
  3. Pour in red wine and beef broth. Add thyme, bay leaf, salt, and pepper. Stir gently to combine.
  4. Cover and cook on low for 8 hours or high for 4-5 hours until beef is tender.
  5. In the last hour of cooking, add the mushrooms.
  6. Discard bay leaf, garnish with chopped parsley, and serve hot with mashed potatoes or crusty bread.

Notes

For a thicker sauce, mix 1 tablespoon cornstarch with 2 tablespoons water and stir in during the last 30 minutes of cooking.
