Description
This heavenly slow cooker Boursin Chicken and Pasta combines tender chicken with creamy garlic herb cheese in a rich tomato broth, finished with fresh spinach. Perfect for busy weeknights when you want maximum flavor with minimal effort!

- 1 1/2 pounds skinless, boneless chicken breast
- 1 teaspoon kosher salt, plus more to taste
- 1/2 teaspoon freshly ground black pepper, plus more to taste
- 1 (14.5 oz) can Italian-style diced tomatoes
- 2 cups chicken broth
- 1 cup orzo pasta
- 2 (5.2 ounce) packages garlic and herb flavored Gournay cheese (such as Boursin®)
- 5 ounces baby spinach
- 1 teaspoon lemon juice (optional)
Instructions
- Season chicken breasts with salt and pepper. Place in bottom of 6-quart slow cooker.
- Pour diced tomatoes and chicken broth over chicken. Cover and cook on LOW for 3 hours.
- Remove chicken and shred using two forks. Return to slow cooker.
- Stir in orzo pasta and Boursin cheese. Cover and cook on HIGH for 30 minutes.
- Add spinach and lemon juice (if using). Stir until spinach wilts. Season with additional salt and pepper to taste.
- Let stand 5 minutes before serving. Garnish with fresh herbs if desired.
Notes
Tips: Substitute kale for spinach if preferred. For creamier texture, stir in 1/4 cup heavy cream at the end. Storage: Refrigerate leftovers in airtight containers for up to 3 days (pasta will absorb more liquid when stored). Equipment: 6-quart slow cooker recommended for best results.
