Ingredients

  • ½ sweet potato, chopped (around 200g)
  • 2 cups chopped potatoes
  • 12 oz (350g) ground turkey
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 tsp dried mint
  • 1 tsp cumin
  • 1 tbsp olive oil
  • 1½ tbsp tomato paste
  • 1 tsp paprika
  • 1⅓ cup water
  • 2 tbsp chopped parsley

Instructions

  1. Heat oil in large skillet over medium heat. Add onion and garlic, sauté until fragrant (2-3 minutes).
  2. Add ground turkey, breaking it apart with a spatula. Cook until browned (5-6 minutes).
  3. Stir in tomato paste, mint, cumin, and paprika. Cook for 1 minute until fragrant.
  4. Add chopped sweet potatoes, potatoes, and water. Bring to simmer.
  5. Cover and cook for 15-20 minutes until potatoes are tender and liquid reduces.
  6. Remove from heat. Sprinkle with fresh parsley before serving.

Notes

Tips: Substitute ground beef for turkey if preferred. Add eggplant for authenticity.
Storage: Refrigerate in airtight containers for up to 3 days. Freezes well for 2 months.
Vegan Option: Use lentils instead of turkey and olive oil instead of butter.
