- ½ sweet potato, chopped (around 200g)
- 2 cups chopped potatoes
- 12 oz (350g) ground turkey
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 tsp dried mint
- 1 tsp cumin
- 1 tbsp olive oil
- 1½ tbsp tomato paste
- 1 tsp paprika
- 1⅓ cup water
- 2 tbsp chopped parsley
Instructions
- Heat oil in large skillet over medium heat. Add onion and garlic, sauté until fragrant (2-3 minutes).
- Add ground turkey, breaking it apart with a spatula. Cook until browned (5-6 minutes).
- Stir in tomato paste, mint, cumin, and paprika. Cook for 1 minute until fragrant.
- Add chopped sweet potatoes, potatoes, and water. Bring to simmer.
- Cover and cook for 15-20 minutes until potatoes are tender and liquid reduces.
- Remove from heat. Sprinkle with fresh parsley before serving.
Notes
Tips: Substitute ground beef for turkey if preferred. Add eggplant for authenticity.
Storage: Refrigerate in airtight containers for up to 3 days. Freezes well for 2 months.
Vegan Option: Use lentils instead of turkey and olive oil instead of butter.
