- 1 9-inch pie crust
- 3–4 tomatoes (about 2 lbs, cut into ¼’ thick slices)
- ¼ cup basil (finely chopped)
- ½ cup green onion (chopped)
- 2 garlic cloves (minced)
- 1 cup sharp cheddar cheese (shredded)
- 1 cup mozzarella cheese (shredded)
- ¾ cup mayonnaise
- Salt and pepper (to taste)
Instructions
- Preheat oven to 375°F (190°C).
- Blind bake the pie crust for 10 minutes, then cool slightly.
- Layer tomato slices in the crust, sprinkling with salt and pepper.
- Top with basil, green onion, and garlic.
- In a bowl, mix cheddar, mozzarella, and mayonnaise.
- Spread the cheese mixture over the tomatoes.
- Bake for 30-35 minutes, until bubbly and golden.
- Let cool 10 minutes before serving.
Notes
Use ripe, firm tomatoes for best texture. Drain excess moisture to prevent sogginess.
