Description

Ingredients

  • 1 9-inch pie crust
  • 34 tomatoes (about 2 lbs, cut into ¼’ thick slices)
  • ¼ cup basil (finely chopped)
  • ½ cup green onion (chopped)
  • 2 garlic cloves (minced)
  • 1 cup sharp cheddar cheese (shredded)
  • 1 cup mozzarella cheese (shredded)
  • ¾ cup mayonnaise
  • Salt and pepper (to taste)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Blind bake the pie crust for 10 minutes, then cool slightly.
  3. Layer tomato slices in the crust, sprinkling with salt and pepper.
  4. Top with basil, green onion, and garlic.
  5. In a bowl, mix cheddar, mozzarella, and mayonnaise.
  6. Spread the cheese mixture over the tomatoes.
  7. Bake for 30-35 minutes, until bubbly and golden.
  8. Let cool 10 minutes before serving.

Notes

Use ripe, firm tomatoes for best texture. Drain excess moisture to prevent sogginess.
