Ingredients

- 6 large eggs
- 1/2 cup cottage cheese
- 1/2 cup shredded cheese (cheddar, Swiss, or your choice)
- 1/4 cup heavy cream
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup cooked bacon, ham, or vegetables (optional)
Instructions
- Preheat the oven to 300°F (150°C).
- In a blender, combine eggs, cottage cheese, heavy cream, salt, and pepper. Blend until smooth.
- Grease a muffin tin or silicone egg bite mold.
- Evenly distribute cheese and any additional mix-ins into the molds.
- Pour the egg mixture over the ingredients.
- Bake for 25-30 minutes or until the egg bites are set.
- Let cool for a few minutes before removing from the molds.
- Serve warm or store in the refrigerator for up to 5 days.
Notes
For a sous vide-style texture, bake with a water bath by placing the muffin tin in a larger pan filled with water.
