Description

Soft and fluffy egg bites, packed with cheese and your favorite mix-ins, perfect for a quick breakfast or snack.


Ingredients

Scale
  • 6 large eggs
  • 1/2 cup cottage cheese
  • 1/2 cup shredded cheese (cheddar, Swiss, or your choice)
  • 1/4 cup heavy cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup cooked bacon, ham, or vegetables (optional)

Instructions

  1. Preheat the oven to 300°F (150°C).
  2. In a blender, combine eggs, cottage cheese, heavy cream, salt, and pepper. Blend until smooth.
  3. Grease a muffin tin or silicone egg bite mold.
  4. Evenly distribute cheese and any additional mix-ins into the molds.
  5. Pour the egg mixture over the ingredients.
  6. Bake for 25-30 minutes or until the egg bites are set.
  7. Let cool for a few minutes before removing from the molds.
  8. Serve warm or store in the refrigerator for up to 5 days.

Notes

For a sous vide-style texture, bake with a water bath by placing the muffin tin in a larger pan filled with water.
