Ingredients

  • 6 large eggs
  • 1/4 cup milk (dairy or plant-based)
  • 1/2 cup shredded cheddar cheese
  • 1/4 tsp salt
  • 1/3 cup add-ins (optional: cooked bacon, spinach, diced peppers, etc.)

Instructions

  1. Preheat oven to 325°F (165°C) and grease a muffin tin.
  2. Whisk eggs, milk, cheese, and salt in a blender or bowl until smooth (small lumps are okay!).
  3. Pour mixture into muffin cups, filling each 3/4 full. Add optional mix-ins.
  4. Bake 18–20 minutes until puffed and golden. Let cool 5 minutes before removing.
  5. Serve warm or store for later!
