Description
A comforting French-inspired garlic soup simmered to perfection and topped with golden, crunchy toasted croutons.

- 2 whole heads of garlic, cloves peeled
- 1 large onion, sliced
- 4 tbsp olive oil
- 6 cups vegetable or chicken broth
- 2 sprigs fresh thyme
- 1 bay leaf
- 4 slices rustic bread
- 2 tbsp butter
- Salt and black pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 375°F (190°C). Toss peeled garlic cloves with 2 tbsp olive oil, then roast for 20–25 minutes until soft and golden.
- In a large pot, heat remaining olive oil over medium heat and sauté sliced onion until caramelized.
- Add roasted garlic, thyme, bay leaf, and broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
- Remove thyme sprigs and bay leaf. Blend soup with an immersion blender until smooth and creamy.
- Season with salt and pepper to taste.
- Meanwhile, prepare croutons: cut bread into cubes, toss with butter, and toast in a skillet or oven until golden and crisp.
- Ladle soup into bowls, top with toasted croutons, and garnish with parsley.
Notes
For extra richness, add a sprinkle of grated Gruyère or Parmesan cheese over the croutons before serving.
