Description

A comforting French-inspired garlic soup simmered to perfection and topped with golden, crunchy toasted croutons.


Ingredients

  • 2 whole heads of garlic, cloves peeled
  • 1 large onion, sliced
  • 4 tbsp olive oil
  • 6 cups vegetable or chicken broth
  • 2 sprigs fresh thyme
  • 1 bay leaf
  • 4 slices rustic bread
  • 2 tbsp butter
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C). Toss peeled garlic cloves with 2 tbsp olive oil, then roast for 20–25 minutes until soft and golden.
  2. In a large pot, heat remaining olive oil over medium heat and sauté sliced onion until caramelized.
  3. Add roasted garlic, thyme, bay leaf, and broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
  4. Remove thyme sprigs and bay leaf. Blend soup with an immersion blender until smooth and creamy.
  5. Season with salt and pepper to taste.
  6. Meanwhile, prepare croutons: cut bread into cubes, toss with butter, and toast in a skillet or oven until golden and crisp.
  7. Ladle soup into bowls, top with toasted croutons, and garnish with parsley.

Notes

For extra richness, add a sprinkle of grated Gruyère or Parmesan cheese over the croutons before serving.
