- 1/4 cup fresh cilantro, chopped or 2 tablespoons dried cilantro
- 2 limes, juiced
- Salt to taste
Instructions
- In a large bowl, combine the diced peaches, tomatoes, red onion, jalapeno, and roasted green chili.
- Add the chopped cilantro and lime juice.
- Mix everything gently until well combined.
- Season with salt to taste.
- Let sit for 10–15 minutes to allow flavors to meld before serving.
