Description

Juicy chicken cutlets seared in garlicky butter, finished with fresh parsley and parmesan—just like your favorite garlic knots!


Ingredients

  • 2 tablespoons olive oil
  • 6 tablespoons unsalted butter, divided
  • 4 chicken cutlets (about 1 1/2 pounds)
  • 1 teaspoon kosher salt, plus more to taste
  • 1/2 teaspoon freshly ground black pepper
  • 4 large cloves garlic, minced
  • 1/4 cup packed fresh parsley leaves and tender stems, finely chopped
  • 1/4 cup finely grated Parmesan cheese
  • 1 lemon, cut into wedges (optional)

Instructions

  1. Heat olive oil and 2 tablespoons of the butter in a large skillet over medium-high heat.
  2. Season the chicken cutlets with salt and pepper.
  3. Cook the chicken until golden brown and cooked through, 3-4 minutes per side. Remove from skillet and set aside.
  4. Reduce heat to medium, add the remaining butter and minced garlic to the skillet, and cook for 1-2 minutes until fragrant.
  5. Return the chicken to the skillet, spoon the garlic butter over the top.
  6. Sprinkle with chopped parsley and Parmesan cheese.
  7. Serve hot, with lemon wedges on the side if desired.
