Juicy chicken cutlets seared in garlicky butter, finished with fresh parsley and parmesan—just like your favorite garlic knots!

- 2 tablespoons olive oil
- 6 tablespoons unsalted butter, divided
- 4 chicken cutlets (about 1 1/2 pounds)
- 1 teaspoon kosher salt, plus more to taste
- 1/2 teaspoon freshly ground black pepper
- 4 large cloves garlic, minced
- 1/4 cup packed fresh parsley leaves and tender stems, finely chopped
- 1/4 cup finely grated Parmesan cheese
- 1 lemon, cut into wedges (optional)
Instructions
- Heat olive oil and 2 tablespoons of the butter in a large skillet over medium-high heat.
- Season the chicken cutlets with salt and pepper.
- Cook the chicken until golden brown and cooked through, 3-4 minutes per side. Remove from skillet and set aside.
- Reduce heat to medium, add the remaining butter and minced garlic to the skillet, and cook for 1-2 minutes until fragrant.
- Return the chicken to the skillet, spoon the garlic butter over the top.
- Sprinkle with chopped parsley and Parmesan cheese.
- Serve hot, with lemon wedges on the side if desired.
