Description

A flavorful twist on classic meatloaf, this Garlic Parmesan Chicken Meatloaf is tender, juicy, and loaded with cheesy garlicky goodness.


Ingredients

  • 1 1/2 lbs ground chicken
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 2 large eggs
  • 1/4 cup milk
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup marinara sauce (for topping)
  • Extra Parmesan and parsley for garnish

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a loaf pan.
  2. In a large bowl, combine ground chicken, breadcrumbs, Parmesan, mozzarella, garlic, parsley, eggs, milk, Italian seasoning, salt, and black pepper.
  3. Mix until fully combined, but avoid overmixing.
  4. Transfer mixture to the prepared loaf pan and shape into a loaf.
  5. Spread marinara sauce evenly over the top.
  6. Bake for 45–50 minutes, until the internal temperature reaches 165°F (74°C).
  7. Let rest for 10 minutes before slicing.
  8. Garnish with extra Parmesan and fresh parsley before serving.

Notes

For extra flavor, add a pinch of red pepper flakes or swap mozzarella for provolone. Serve with mashed potatoes or roasted vegetables.
