A flavorful twist on classic meatloaf, this Garlic Parmesan Chicken Meatloaf is tender, juicy, and loaded with cheesy garlicky goodness.

- 1 1/2 lbs ground chicken
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/2 cup shredded mozzarella cheese
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 2 large eggs
- 1/4 cup milk
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup marinara sauce (for topping)
- Extra Parmesan and parsley for garnish
Instructions
- Preheat oven to 375°F (190°C) and lightly grease a loaf pan.
- In a large bowl, combine ground chicken, breadcrumbs, Parmesan, mozzarella, garlic, parsley, eggs, milk, Italian seasoning, salt, and black pepper.
- Mix until fully combined, but avoid overmixing.
- Transfer mixture to the prepared loaf pan and shape into a loaf.
- Spread marinara sauce evenly over the top.
- Bake for 45–50 minutes, until the internal temperature reaches 165°F (74°C).
- Let rest for 10 minutes before slicing.
- Garnish with extra Parmesan and fresh parsley before serving.
Notes
For extra flavor, add a pinch of red pepper flakes or swap mozzarella for provolone. Serve with mashed potatoes or roasted vegetables.
