Ingredients

- 1 tbsp avocado oil or olive oil
- 1 lb boneless, skinless chicken breast butterflied or beaten down to about ½” thickness
- 1 tbsp italian seasoning
- ½ tsp paprika
- Salt & pepper to taste
- 1 tbsp avocado oil or olive oil (for pasta)
- 1 tbsp unsalted butter
- ½ jumbo yellow onion, diced (1 cup)
- 4–6 large cloves garlic, minced
- 8 oz dry penne pasta
- 2 cups chicken broth
- 1 cup finely grated parmesan cheese
- ½ cup heavy cream
- 2 tbsp chopped parsley
Instructions
- Season chicken with italian seasoning, paprika, salt, and pepper.
- Heat oil in a skillet over medium heat and cook chicken until golden and cooked through. Set aside and slice.
- In the same skillet, add oil and butter, then sauté onions until soft.
- Add minced garlic and cook until fragrant.
- Pour in chicken broth and bring to a boil.
- Add penne pasta and cook uncovered until al dente and most liquid is absorbed.
- Stir in heavy cream and parmesan until creamy and smooth.
- Return sliced chicken to the pan and stir to combine.
- Garnish with chopped parsley and serve warm.
Notes
Use freshly grated parmesan for best texture and flavor. You can substitute gluten-free or protein pasta as needed.
