Ingredients

  • 1 tbsp avocado oil or olive oil
  • 1 lb boneless, skinless chicken breast butterflied or beaten down to about ½” thickness
  • 1 tbsp italian seasoning
  • ½ tsp paprika
  • Salt & pepper to taste
  • 1 tbsp avocado oil or olive oil (for pasta)
  • 1 tbsp unsalted butter
  • ½ jumbo yellow onion, diced (1 cup)
  • 46 large cloves garlic, minced
  • 8 oz dry penne pasta
  • 2 cups chicken broth
  • 1 cup finely grated parmesan cheese
  • ½ cup heavy cream
  • 2 tbsp chopped parsley

Instructions

  1. Season chicken with italian seasoning, paprika, salt, and pepper.
  2. Heat oil in a skillet over medium heat and cook chicken until golden and cooked through. Set aside and slice.
  3. In the same skillet, add oil and butter, then sauté onions until soft.
  4. Add minced garlic and cook until fragrant.
  5. Pour in chicken broth and bring to a boil.
  6. Add penne pasta and cook uncovered until al dente and most liquid is absorbed.
  7. Stir in heavy cream and parmesan until creamy and smooth.
  8. Return sliced chicken to the pan and stir to combine.
  9. Garnish with chopped parsley and serve warm.

Notes

Use freshly grated parmesan for best texture and flavor. You can substitute gluten-free or protein pasta as needed.
