- 1 cup all-purpose flour
- 1.5 teaspoons baking powder
- ½ teaspoon sea salt
- 1 cup blended cottage cheese
- 1 cup shredded parmesan cheese, divided
- 2 tablespoons unsalted butter, softened
- 2 cloves garlic, minced
- 2 teaspoons Italian seasoning, divided
Instructions
- Preheat oven to 375°F (190°C). Grease a baking sheet.
- In a large bowl, whisk together flour, baking powder, and sea salt.
- Add blended cottage cheese, ½ cup of the shredded parmesan, softened butter, minced garlic, and 1 teaspoon Italian seasoning. Mix until a dough forms.
- Turn dough onto a floured surface and knead lightly, about 2 minutes, until smooth.
- Shape dough into 12 equal balls and place on the prepared baking sheet.
- Sprinkle the remaining ½ cup parmesan cheese and the rest of the Italian seasoning over the tops.
- Bake for 18–20 minutes, or until golden brown.
- Remove from oven and let cool slightly before serving.
Notes
Tip: For extra flavor, brush the rolls with melted butter immediately after baking. Store in an airtight container for up to 3 days, reheating in the oven to retain crispness.
