Ingredients

  • 1 cup all-purpose flour
  • 1.5 teaspoons baking powder
  • ½ teaspoon sea salt
  • 1 cup blended cottage cheese
  • 1 cup shredded parmesan cheese, divided
  • 2 tablespoons unsalted butter, softened
  • 2 cloves garlic, minced
  • 2 teaspoons Italian seasoning, divided

Instructions

  1. Preheat oven to 375°F (190°C). Grease a baking sheet.
  2. In a large bowl, whisk together flour, baking powder, and sea salt.
  3. Add blended cottage cheese, ½ cup of the shredded parmesan, softened butter, minced garlic, and 1 teaspoon Italian seasoning. Mix until a dough forms.
  4. Turn dough onto a floured surface and knead lightly, about 2 minutes, until smooth.
  5. Shape dough into 12 equal balls and place on the prepared baking sheet.
  6. Sprinkle the remaining ½ cup parmesan cheese and the rest of the Italian seasoning over the tops.
  7. Bake for 18–20 minutes, or until golden brown.
  8. Remove from oven and let cool slightly before serving.
