Crispy on the outside, creamy on the inside — these Garlicky Mashed Potato Cakes are the perfect way to use up leftovers with flavor-packed results.
Ingredients

- 2 cups mashed potatoes (chilled)
- 2 cloves garlic, minced
- 1/2 cup grated cheddar cheese
- 1/4 cup chopped green onions
- 1/4 cup all-purpose flour
- 1 egg
- Salt and pepper to taste
- 2 tbsp unsalted butter
- 2 tbsp olive oil
Instructions
- In a large bowl, combine mashed potatoes, garlic, cheddar, green onions, flour, and egg. Mix until well blended. Season with salt and pepper.
- Form the mixture into small patties, about 1/2 inch thick.
- Heat butter and olive oil in a skillet over medium heat.
- Cook potato cakes in batches for 3–4 minutes on each side or until golden brown and crispy.
- Drain on paper towels and serve warm.
Notes
Best with cold, firm mashed potatoes. Add a dollop of sour cream or serve with a poached egg on top for a complete dish.
