Description

Crispy on the outside, creamy on the inside — these Garlicky Mashed Potato Cakes are the perfect way to use up leftovers with flavor-packed results.


Ingredients

  • 2 cups mashed potatoes (chilled)
  • 2 cloves garlic, minced
  • 1/2 cup grated cheddar cheese
  • 1/4 cup chopped green onions
  • 1/4 cup all-purpose flour
  • 1 egg
  • Salt and pepper to taste
  • 2 tbsp unsalted butter
  • 2 tbsp olive oil

Instructions

  1. In a large bowl, combine mashed potatoes, garlic, cheddar, green onions, flour, and egg. Mix until well blended. Season with salt and pepper.
  2. Form the mixture into small patties, about 1/2 inch thick.
  3. Heat butter and olive oil in a skillet over medium heat.
  4. Cook potato cakes in batches for 3–4 minutes on each side or until golden brown and crispy.
  5. Drain on paper towels and serve warm.

Notes

Best with cold, firm mashed potatoes. Add a dollop of sour cream or serve with a poached egg on top for a complete dish.
