Ingredients

  • 4 large potatoes, peeled and diced
  • 4 cups gluten-free vegetable broth
  • 1 cup coconut milk (or heavy cream if not dairy-free)
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onions and garlic, sauté until fragrant and soft.
  3. Stir in diced potatoes and cook for 2-3 minutes.
