Ingredients

Scale
  • 1/2 cup salted butter, softened (113 g)
  • 1/2 cup granulated sugar (100 g)
  • 2 large eggs, room temperature
  • 3 tablespoons heavy cream (45 mL)
  • 1 teaspoon pure vanilla extract
  • 1 1/4 cups gluten-free all purpose flour blend (150 g)
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/8 teaspoon salt
  • 3 large Granny Smith or Pink Lady apples, peeled and cut into 1-inch chunks
  • For the streusel topping: 3/4 cup gluten-free all purpose flour blend (96 g)
  • 1/4 cup gluten-free old fashioned rolled oats (25 g)
  • 1/2 cup brown sugar (100 g)
  • 6 tablespoons salted cold butter, cut into small pieces (85 g)
  • 1/2 cup chopped walnuts (75 g)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking pan.
  2. In a large bowl, beat butter and sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition, then stir in vanilla and heavy cream.
  4. In a separate bowl, whisk together gluten-free flour blend, baking powder, cinnamon, and salt.
  5. Gradually fold the dry ingredients into the wet mixture until just combined.
  6. Gently fold in the apple chunks.
  7. In a small bowl, combine streusel topping ingredients (flour, oats, brown sugar, butter, and walnuts) until crumbly; sprinkle evenly over the batter.
  8. Bake for 45–50 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool before serving.

Notes

For best flavor, use fresh apples and high-quality butter. If you need a dairy-free version, substitute the butter with coconut oil and use almond milk instead of heavy cream. This cake stores well, wrapped tightly, at room temperature for up to 2 days or in the refrigerator for up to 5 days. Reheat slices gently in the microwave for a warm treat.
