Description

A hearty and flavorful gluten-free meatloaf that’s moist, tender, and perfect for any comforting dinner.


Ingredients

  • 1 1/2 lbs ground beef
  • 1/2 cup gluten-free rolled oats
  • 1/4 cup almond flour
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 eggs
  • 1/4 cup ketchup (plus extra for topping)
  • 1 tbsp Worcestershire sauce (gluten-free)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried thyme

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, combine ground beef, oats, almond flour, chopped onion, minced garlic, eggs, ketchup, Worcestershire sauce, salt, pepper, and thyme.
  3. Mix until just combined. Do not overmix.
  4. Shape the mixture into a loaf and place it on a lined or greased baking sheet or into a loaf pan.
  5. Spread a thin layer of ketchup on top.
  6. Bake for 50–60 minutes, or until the internal temperature reaches 160°F (71°C).
  7. Let rest for 10 minutes before slicing and serving.

Notes

Use certified gluten-free oats and Worcestershire sauce to ensure the dish is 100% gluten-free. Serve with mashed potatoes or a fresh green salad.
