A comforting and hearty chicken meatloaf recipe just like grandma used to make, tender, juicy, and full of homestyle flavor.

- 1 1/2 pounds ground chicken
- 1 cup breadcrumbs
- 1/2 cup milk
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 1 large egg
- 2 tablespoons ketchup
- 1 teaspoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup fresh parsley, chopped
- 1/2 cup ketchup (for topping)
Instructions
- Preheat oven to 375°F (190°C).
- In a large bowl, combine breadcrumbs and milk, let soak for 5 minutes.
- Add ground chicken, onion, garlic, Parmesan, egg, 2 tablespoons ketchup, Worcestershire sauce, thyme, salt, pepper, and parsley.
- Mix gently until just combined.
- Shape into a loaf and place in a greased loaf pan or on a parchment-lined baking sheet.
- Spread 1/2 cup ketchup evenly over the top.
- Bake for 55–60 minutes, or until internal temperature reaches 165°F (74°C).
- Let rest 10 minutes before slicing and serving.
Notes
For extra moisture, don’t overmix the meat mixture. Leftovers make excellent sandwiches the next day.
