Description

Indulge in the vibrant flavors of Greece with this Greek Stuffed Chicken Dinner Recipe. Tender chicken breasts are marinated in aromatic herbs, then filled with a delightful mixture of spinach, feta, roasted red peppers, and fresh basil. Baked to golden perfection, this Mediterranean masterpiece brings a taste of the sun‑kissed coast to your table. Perfect for a wholesome family dinner or an impressive dinner party, this recipe is both nutritious and bursting with authentic Greek flair.

Ingredients

Scale
  • 4 8-ounce skinless boneless chicken breasts
  • 1 teaspoon dried oregano
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cup baby spinach, chopped
  • ½ cup crumbled feta cheese
  • ¼ cup chopped roasted red peppers
  • 1 tablespoon chopped fresh basil
  • 2 tablespoons sliced olives
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil, divided

Instructions

  1. Preheat the oven to 375°F (190°C). Lightly grease a baking dish.
  2. In a small bowl, combine oregano, paprika, salt, and black pepper; set aside.
  3. Pat the chicken breasts dry and rub them with 1 tablespoon olive oil. Sprinkle the seasoning mixture evenly over both sides.
  4. Make a deep pocket in each chicken breast by cutting a horizontal slit from the thicker side, being careful not to cut all the way through.
  5. In a mixing bowl, combine chopped spinach, crumbled feta, roasted red peppers, chopped basil, sliced olives, and minced garlic. Stuff the mixture evenly into each chicken pocket.
  6. Place the stuffed chicken breasts in the prepared baking dish. Drizzle the remaining 1 tablespoon olive oil over the top.
  7. Bake for 25 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
  8. Allow to rest for 5 minutes before serving. Garnish with extra fresh basil if desired.

Notes

Tip: For a gluten‑free version, ensure the olives are packed in brine without added wheat. Substitute the feta with goat cheese for a tangier flavor, or use dairy‑free feta for a vegan option. Leftovers store well in an airtight container in the refrigerator for up to 3 days; reheat gently in the oven to retain moisture.
