Description
A moist and healthy zucchini bread made with Greek yogurt, oat flour, and your favorite add-ins.
Ingredients

- 1 3⁄4 cup oat flour
- 1⁄4 cup granulated sweetener (like monk fruit)
- 1 tsp baking soda
- 1⁄2 tsp cinnamon
- 1⁄4 tsp nutmeg
- 1⁄2 tsp salt
- 1 1⁄2 cup zucchini, grated and squeezed dry (about 2 medium)
- 2 large eggs
- 1⁄2 cup plain nonfat Greek yogurt
- 1 tbsp vanilla extract
- 1⁄2 cup unsweetened vanilla almond milk
- 1 cup nuts or add-ins like chocolate chips or raisins
Instructions
- Preheat oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, mix oat flour, sweetener, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, whisk together eggs, Greek yogurt, vanilla extract, and almond milk.
- Add grated zucchini to the wet ingredients and mix well.
- Combine the wet and dry mixtures until just incorporated.
- Fold in nuts or other add-ins.
- Pour batter into the prepared loaf pan and smooth the top.
- Bake for 45–55 minutes, or until a toothpick inserted in the center comes out clean.
- Let cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
For best texture, make sure to squeeze out as much moisture as possible from the grated zucchini.
