Description

A moist and healthy zucchini bread made with Greek yogurt, oat flour, and your favorite add-ins.


Ingredients

  • 1 3⁄4 cup oat flour
  • 1⁄4 cup granulated sweetener (like monk fruit)
  • 1 tsp baking soda
  • 1⁄2 tsp cinnamon
  • 1⁄4 tsp nutmeg
  • 1⁄2 tsp salt
  • 1 1⁄2 cup zucchini, grated and squeezed dry (about 2 medium)
  • 2 large eggs
  • 1⁄2 cup plain nonfat Greek yogurt
  • 1 tbsp vanilla extract
  • 1⁄2 cup unsweetened vanilla almond milk
  • 1 cup nuts or add-ins like chocolate chips or raisins

Instructions

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, mix oat flour, sweetener, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, whisk together eggs, Greek yogurt, vanilla extract, and almond milk.
  4. Add grated zucchini to the wet ingredients and mix well.
  5. Combine the wet and dry mixtures until just incorporated.
  6. Fold in nuts or other add-ins.
  7. Pour batter into the prepared loaf pan and smooth the top.
  8. Bake for 45–55 minutes, or until a toothpick inserted in the center comes out clean.
  9. Let cool in pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

For best texture, make sure to squeeze out as much moisture as possible from the grated zucchini.
