  • One 15‑ounce can chickpeas (garbanzo beans), drained and rinsed
  • 1–2 tablespoons water (optional)
  • Garnish with extra olive oil and a sprinkling of chopped fresh herbs

Instructions

  1. In a food processor, combine tahini, fresh lemon juice, olive oil, and garlic. Blend until smooth.
  2. Add the chopped parsley, tarragon or basil, and chives or green onion; pulse to incorporate.
  3. Add the drained chickpeas and blend, adding water as needed to reach a creamy consistency.
  4. Season with salt and blend again, tasting and adjusting seasoning.
  5. Transfer to a serving bowl, drizzle with olive oil, and sprinkle with extra fresh herbs.
