A sweet and tangy twist on classic pie, this Green Tomato Pie is a delightful way to use up your end-of-season tomatoes.


Ingredients

  • 11/2 cups sugar
  • 5 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • Pinch salt
  • 3 cups thinly sliced green tomatoes (4 to 5 medium)
  • 1 tablespoon cider vinegar
  • Dough for double-crust pie
  • 1 tablespoon butter

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, mix sugar, flour, cinnamon, and salt.
  3. Add sliced green tomatoes and cider vinegar to the dry mixture, stir to coat.
  4. Roll out half the dough and line a 9-inch pie plate.
  5. Pour the tomato mixture into the crust.
  6. Dot with butter evenly over the filling.
  7. Cover with the top crust, seal and flute edges. Cut slits for steam to escape.
  8. Bake for 30 to 35 minutes or until crust is golden brown.
  9. Let cool before serving.

Use firm, underripe green tomatoes for best texture and tartness.
