Instructions

  1. Season chicken breasts with kosher salt and sugar if brining.
  2. Let rest for 30 minutes to 1 hour if brined, or proceed directly if not.
  3. Pat chicken dry and season with black pepper.
  4. Rub with olive oil to prevent sticking.
