Ingredients

  • 1 1/2 pounds boneless skinless chicken breasts
  • 2 teaspoons Italian seasoning (homemade or store-bought)
  • 1/2 teaspoon paprika
  • 1/2 teaspoon red pepper flakes (optional)
  • 5 large garlic cloves, minced
  • 2 lemons, zested and juiced
  • 1/3 cup extra virgin olive oil, plus more for oiling the grill
  • Kosher salt
  • 1/4 cup chopped Italian parsley leaves, for garnish

Instructions

  1. In a bowl, whisk together lemon zest, lemon juice, garlic, Italian seasoning, paprika, red pepper flakes, olive oil, and a pinch of kosher salt.
  2. Add the chicken breasts to the marinade, coating well. Cover and refrigerate for at least 30 minutes or up to 2 hours.
  3. Preheat the grill to medium-high heat and lightly oil the grates.
  4. Remove the chicken from the marinade and grill for about 5-7 minutes per side, or until fully cooked and charred slightly.
  5. Transfer to a plate and let rest for 5 minutes.
  6. Garnish with chopped Italian parsley before serving.
