- 1 1/2 pounds boneless skinless chicken breasts
- 2 teaspoons Italian seasoning (homemade or store-bought)
- 1/2 teaspoon paprika
- 1/2 teaspoon red pepper flakes (optional)
- 5 large garlic cloves, minced
- 2 lemons, zested and juiced
- 1/3 cup extra virgin olive oil, plus more for oiling the grill
- Kosher salt
- 1/4 cup chopped Italian parsley leaves, for garnish
Instructions
- In a bowl, whisk together lemon zest, lemon juice, garlic, Italian seasoning, paprika, red pepper flakes, olive oil, and a pinch of kosher salt.
- Add the chicken breasts to the marinade, coating well. Cover and refrigerate for at least 30 minutes or up to 2 hours.
- Preheat the grill to medium-high heat and lightly oil the grates.
- Remove the chicken from the marinade and grill for about 5-7 minutes per side, or until fully cooked and charred slightly.
- Transfer to a plate and let rest for 5 minutes.
- Garnish with chopped Italian parsley before serving.
Notes
For even cooking, pound the chicken breasts to an even thickness before marinating.
