Description

A fresh and flavorful summer salad with grilled zucchini, sweet stone fruits, and a tangy yogurt dressing.


Ingredients

  • 1 large zucchini or yellow summer squash, cut into 1/2-inch thick slices
  • 2 tablespoons canola or vegetable oil
  • 2 ripe white peaches, pitted and halved
  • 2 ripe nectarines, pitted and quartered
  • 1 cup plain full-fat yogurt
  • 1 large garlic clove, grated
  • 2 tablespoons plus 1 teaspoon fresh lemon juice
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • Basil or mint leaves (optional)

Instructions

  1. Preheat grill or grill pan over medium-high heat.
  2. Brush zucchini slices, peaches, and nectarines with oil.
  3. Grill zucchini until tender and charred, about 2–3 minutes per side.
  4. Grill peaches and nectarines until slightly softened and charred, about 1–2 minutes per side.
  5. In a small bowl, mix yogurt, grated garlic, lemon juice, salt, and pepper until smooth.
  6. Arrange grilled zucchini and fruit on a serving platter.
  7. Dollop or drizzle yogurt dressing over the top.
  8. Garnish with fresh basil or mint leaves if using.

Notes

Use ripe but firm stone fruits to ensure they hold up well on the grill.
