- 1 lb ground beef
- 1 cup long-grain white rice
- 2 cups beef broth
- 1 can (14.5 oz) diced tomatoes
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 cup shredded cheddar cheese
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1/2 teaspoon dried oregano
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add ground beef and cook until browned, breaking it apart with a spoon.
- Stir in chopped onion and garlic, cooking until softened.
- Season with paprika, oregano, salt, and pepper.
- Add rice, diced tomatoes, and beef broth to the skillet.
- Stir well, bring to a boil, then reduce heat to low.
- Cover and simmer for 18–20 minutes, until rice is tender and liquid absorbed.
- Remove from heat and sprinkle with shredded cheddar cheese.
- Cover for 2–3 minutes to let cheese melt.
- Garnish with fresh parsley before serving.
Notes
For extra flavor, add bell peppers or corn along with the onions. You can also swap cheddar for mozzarella or Monterey Jack cheese.
