Description

Ingredients

  • 1 lb ground beef
  • 1 cup long-grain white rice
  • 2 cups beef broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup shredded cheddar cheese
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add ground beef and cook until browned, breaking it apart with a spoon.
  3. Stir in chopped onion and garlic, cooking until softened.
  4. Season with paprika, oregano, salt, and pepper.
  5. Add rice, diced tomatoes, and beef broth to the skillet.
  6. Stir well, bring to a boil, then reduce heat to low.
  7. Cover and simmer for 18–20 minutes, until rice is tender and liquid absorbed.
  8. Remove from heat and sprinkle with shredded cheddar cheese.
  9. Cover for 2–3 minutes to let cheese melt.
  10. Garnish with fresh parsley before serving.

Notes

For extra flavor, add bell peppers or corn along with the onions. You can also swap cheddar for mozzarella or Monterey Jack cheese.
