- 1 lb ground beef
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 bell pepper, chopped
- 2 tbsp chili powder
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1/2 tsp cayenne pepper (optional)
- 1 tsp salt
- 1/2 tsp black pepper
- 1 (14.5 oz) can diced tomatoes
- 1 (6 oz) can tomato paste
- 1 (15 oz) can kidney beans, drained and rinsed
- 1 (15 oz) can black beans, drained and rinsed
- 1 cup beef broth or water
- 2 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add diced onion and bell pepper, sauté until softened (about 5 minutes).
- Stir in minced garlic and cook for 1 minute.
- Add ground beef and cook until browned, breaking it up with a spoon.
- Drain excess fat if needed.
- Stir in chili powder, cumin, paprika, cayenne, salt, and pepper. Cook for 1 minute to bloom the spices.
- Add tomato paste and cook for 2 minutes, stirring to combine.
- Pour in diced tomatoes, both beans, and beef broth. Stir well.
- Bring to a simmer, reduce heat, and cover partially.
- Simmer for 30–40 minutes, stirring occasionally, until thickened and flavors are developed.
- Taste and adjust seasoning as needed before serving.
Notes
Serve with toppings like shredded cheese, sour cream, chopped onions, or jalapeños. Can be refrigerated up to 4 days or frozen for longer storage.
