Description

Flaky, golden pastries filled with seasoned ground beef, onions, and spices. These homemade empanadas are a flavorful snack or main dish everyone will love.


Ingredients

  • 1 lb ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/4 tsp chili powder
  • Salt and pepper to taste
  • 1/4 cup tomato sauce
  • 2 tbsp chopped green olives (optional)
  • 1 tbsp olive oil
  • 1 egg, beaten (for egg wash)
  • 1 package empanada dough discs (store-bought or homemade)

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Heat olive oil in a skillet over medium heat.
  3. Add chopped onion and sauté until soft.
  4. Stir in garlic and cook for 1 minute.
  5. Add ground beef and cook until browned, breaking it apart with a spoon.
  6. Season with cumin, paprika, chili powder, salt, and pepper.
  7. Stir in tomato sauce and simmer for 5–7 minutes until thickened.
  8. Add chopped olives if using, then remove from heat and let cool slightly.
  9. Place a spoonful of beef mixture in the center of each empanada disc.
  10. Fold over, press edges to seal, and crimp with a fork.
  11. Brush tops with beaten egg and place on prepared baking sheet.
  12. Bake for 18–22 minutes or until golden brown.
  13. Let cool slightly before serving.

Notes

You can freeze assembled empanadas before baking for a quick future meal. Serve with chimichurri, salsa, or sour cream for dipping.
