Description
Flaky, golden pastries filled with seasoned ground beef, onions, and spices. These homemade empanadas are a flavorful snack or main dish everyone will love.

			- 1 lb ground beef
 - 1 small onion, finely chopped
 - 2 cloves garlic, minced
 - 1/2 tsp ground cumin
 - 1/2 tsp smoked paprika
 - 1/4 tsp chili powder
 - Salt and pepper to taste
 - 1/4 cup tomato sauce
 - 2 tbsp chopped green olives (optional)
 - 1 tbsp olive oil
 - 1 egg, beaten (for egg wash)
 - 1 package empanada dough discs (store-bought or homemade)
 
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
 - Heat olive oil in a skillet over medium heat.
 - Add chopped onion and sauté until soft.
 - Stir in garlic and cook for 1 minute.
 - Add ground beef and cook until browned, breaking it apart with a spoon.
 - Season with cumin, paprika, chili powder, salt, and pepper.
 - Stir in tomato sauce and simmer for 5–7 minutes until thickened.
 - Add chopped olives if using, then remove from heat and let cool slightly.
 - Place a spoonful of beef mixture in the center of each empanada disc.
 - Fold over, press edges to seal, and crimp with a fork.
 - Brush tops with beaten egg and place on prepared baking sheet.
 - Bake for 18–22 minutes or until golden brown.
 - Let cool slightly before serving.
 
Notes
You can freeze assembled empanadas before baking for a quick future meal. Serve with chimichurri, salsa, or sour cream for dipping.
