A comforting and cheesy casserole loaded with ground beef, spinach, and creamy layers — a perfect weeknight dinner for the whole family.

- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 (10 oz) package frozen chopped spinach, thawed and drained
- 1 cup cottage cheese
- 1/2 cup sour cream
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 egg
- 1/2 tsp Italian seasoning
- Salt and pepper to taste
- 1 tbsp olive oil
Instructions
- Preheat oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat. Add onion and garlic; sauté until soft.
- Add ground beef and cook until browned. Season with salt, pepper, and Italian seasoning. Drain excess fat.
- In a large bowl, mix spinach, cottage cheese, sour cream, egg, and half of the mozzarella and Parmesan cheeses.
- In a greased baking dish, layer the spinach mixture and beef mixture evenly.
- Top with remaining mozzarella and Parmesan cheese.
- Bake uncovered for 30–35 minutes, until hot and bubbly.
- Let rest for 5–10 minutes before serving.
Notes
You can substitute cottage cheese with ricotta and add cooked pasta or rice for a heartier version.
