Classic bell peppers stuffed with seasoned ground beef, rice, and cheese – baked to perfection for a hearty, comforting meal.

- 4 large bell peppers (any color)
- 1 lb (450g) ground beef
- 1 cup cooked rice
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup tomato sauce
- 1 tsp Italian seasoning
- Salt and pepper to taste
- 1 cup shredded cheese (cheddar or mozzarella)
- 1 tbsp olive oil
- Fresh parsley for garnish (optional)
Instructions
- Preheat oven to 180°C (350°F).
- Cut the tops off the bell peppers and remove seeds and membranes. Set aside.
- In a skillet, heat olive oil over medium heat. Add chopped onion and garlic; sauté until soft.
- Add ground beef, breaking it up as it cooks. Cook until browned.
- Stir in tomato sauce, cooked rice, Italian seasoning, salt, and pepper. Simmer for 5 minutes.
- Spoon the beef mixture into each bell pepper. Place in a baking dish.
- Top each pepper with shredded cheese.
- Add a bit of water to the bottom of the dish and cover with foil.
- Bake for 30-35 minutes. Uncover for the last 10 minutes to melt and brown the cheese.
- Garnish with chopped parsley before serving, if desired.
Notes
Use quinoa or cauliflower rice for a lower-carb option. You can also make these ahead and reheat for easy lunches.
