Description

Classic bell peppers stuffed with seasoned ground beef, rice, and cheese – baked to perfection for a hearty, comforting meal.


Ingredients

  • 4 large bell peppers (any color)
  • 1 lb (450g) ground beef
  • 1 cup cooked rice
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup tomato sauce
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 tbsp olive oil
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat oven to 180°C (350°F).
  2. Cut the tops off the bell peppers and remove seeds and membranes. Set aside.
  3. In a skillet, heat olive oil over medium heat. Add chopped onion and garlic; sauté until soft.
  4. Add ground beef, breaking it up as it cooks. Cook until browned.
  5. Stir in tomato sauce, cooked rice, Italian seasoning, salt, and pepper. Simmer for 5 minutes.
  6. Spoon the beef mixture into each bell pepper. Place in a baking dish.
  7. Top each pepper with shredded cheese.
  8. Add a bit of water to the bottom of the dish and cover with foil.
  9. Bake for 30-35 minutes. Uncover for the last 10 minutes to melt and brown the cheese.
  10. Garnish with chopped parsley before serving, if desired.

Notes

Use quinoa or cauliflower rice for a lower-carb option. You can also make these ahead and reheat for easy lunches.
