Description

Ingredients

  • 6 large eggs
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and black pepper, to taste
  • 1/2 tsp paprika
  • 1/4 tsp chili flakes (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced onion, bell pepper, and garlic. Cook for 3-4 minutes until softened.
  3. Add ground turkey, season with salt, pepper, paprika, and chili flakes. Cook until browned and fully cooked, breaking it apart with a spoon.
  4. In a bowl, whisk the eggs with a pinch of salt and pepper.
  5. Pour eggs into the skillet with the turkey mixture. Stir gently until eggs are cooked and scrambled, about 3-4 minutes.
  6. Remove from heat and garnish with fresh parsley.
  7. Serve warm with toast, tortillas, or over rice.

Notes

You can add spinach, mushrooms, or cheese for extra flavor. Adjust spices to your taste.
