- 6 large eggs
- 1 small onion, diced
- 1 bell pepper, diced
- 2 cloves garlic, minced
- 2 tbsp olive oil
- Salt and black pepper, to taste
- 1/2 tsp paprika
- 1/4 tsp chili flakes (optional)
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add diced onion, bell pepper, and garlic. Cook for 3-4 minutes until softened.
- Add ground turkey, season with salt, pepper, paprika, and chili flakes. Cook until browned and fully cooked, breaking it apart with a spoon.
- In a bowl, whisk the eggs with a pinch of salt and pepper.
- Pour eggs into the skillet with the turkey mixture. Stir gently until eggs are cooked and scrambled, about 3-4 minutes.
- Remove from heat and garnish with fresh parsley.
- Serve warm with toast, tortillas, or over rice.
Notes
You can add spinach, mushrooms, or cheese for extra flavor. Adjust spices to your taste.
