A lighter, deconstructed version of classic egg rolls made with ground turkey, crunchy cabbage, and savory Asian-inspired flavors.
Ingredients

- 1 lb ground turkey
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 tablespoon grated ginger
- 1 small onion, diced
- 1/4 cup low-sodium soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon sesame oil
- 1 tablespoon sriracha (optional)
- 1 bag (14 oz) coleslaw mix or shredded cabbage
- 2 green onions, sliced
- 1 tablespoon sesame seeds
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add ground turkey and cook until browned, about 6–7 minutes.
- Stir in onion, garlic, and ginger, cooking until softened and fragrant.
- Add soy sauce, rice vinegar, sesame oil, and sriracha; stir well.
- Mix in coleslaw mix or cabbage and cook for 5–7 minutes until softened but still slightly crunchy.
- Top with green onions and sesame seeds before serving.
Notes
This dish makes a great low-carb, high-protein meal. For extra flavor, drizzle with spicy mayo or serve over cauliflower rice.
