Description

A lighter, deconstructed version of classic egg rolls made with ground turkey, crunchy cabbage, and savory Asian-inspired flavors.


Ingredients

  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 1 small onion, diced
  • 1/4 cup low-sodium soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon sriracha (optional)
  • 1 bag (14 oz) coleslaw mix or shredded cabbage
  • 2 green onions, sliced
  • 1 tablespoon sesame seeds

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add ground turkey and cook until browned, about 6–7 minutes.
  3. Stir in onion, garlic, and ginger, cooking until softened and fragrant.
  4. Add soy sauce, rice vinegar, sesame oil, and sriracha; stir well.
  5. Mix in coleslaw mix or cabbage and cook for 5–7 minutes until softened but still slightly crunchy.
  6. Top with green onions and sesame seeds before serving.

Notes

This dish makes a great low-carb, high-protein meal. For extra flavor, drizzle with spicy mayo or serve over cauliflower rice.
