Description

A lighter, deconstructed version of classic egg rolls made with ground turkey, cabbage, and flavorful Asian seasonings, served in a bowl.


Ingredients

  • 1 lb ground turkey
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 small onion, diced
  • 1 bag (14 oz) coleslaw mix (shredded cabbage and carrots)
  • 2 green onions, sliced
  • 2 tablespoons rice vinegar
  • 1 tablespoon hoisin sauce
  • 1 tablespoon sriracha (optional)
  • Sesame seeds, for garnish
  • Cooked rice or cauliflower rice, for serving

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add garlic, ginger, and onion; sauté until softened.
  3. Stir in ground turkey and cook until browned.
  4. Add soy sauce, hoisin sauce, and rice vinegar, mixing well.
  5. Stir in coleslaw mix and cook until cabbage is tender, about 5 minutes.
  6. Drizzle with sesame oil and add sriracha if desired.
  7. Top with green onions and sesame seeds.
  8. Serve in bowls with rice or cauliflower rice.

Notes

This dish is a healthy low-carb meal that comes together in under 30 minutes. Adjust spice level with sriracha to taste.
