Description
This Ground Turkey Enchilada Casserole is a hearty, cheesy, and flavorful layered bake with lean turkey, tortillas, beans, and enchilada sauce.

- 1 lb ground turkey
- 1 packet taco seasoning
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) red enchilada sauce
- 1 cup salsa
- 6 corn tortillas
- 2 cups shredded Mexican cheese blend
- 1/2 cup sour cream
- 2 green onions, chopped
- 1 tbsp olive oil
- Cooking spray
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish with cooking spray.
- Heat olive oil in a large skillet over medium heat. Add ground turkey and cook until no longer pink, breaking it apart with a spoon.
- Stir in taco seasoning, black beans, corn, salsa, and half of the enchilada sauce. Simmer for 3-4 minutes.
- Spread a thin layer of the turkey mixture in the bottom of the baking dish.
- Layer tortillas, turkey mixture, and cheese, repeating until all ingredients are used, finishing with cheese on top.
- Pour remaining enchilada sauce evenly over the top.
- Bake uncovered for 20-25 minutes, until cheese is melted and bubbly.
- Let rest 5 minutes before serving. Top with sour cream and green onions.
Notes
For added flavor, use fire-roasted corn and top with fresh cilantro or sliced jalapeños.
