Description

This Ground Turkey Enchilada Casserole is a hearty, cheesy, and flavorful layered bake with lean turkey, tortillas, beans, and enchilada sauce.


Ingredients

  • 1 lb ground turkey
  • 1 packet taco seasoning
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) red enchilada sauce
  • 1 cup salsa
  • 6 corn tortillas
  • 2 cups shredded Mexican cheese blend
  • 1/2 cup sour cream
  • 2 green onions, chopped
  • 1 tbsp olive oil
  • Cooking spray

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish with cooking spray.
  2. Heat olive oil in a large skillet over medium heat. Add ground turkey and cook until no longer pink, breaking it apart with a spoon.
  3. Stir in taco seasoning, black beans, corn, salsa, and half of the enchilada sauce. Simmer for 3-4 minutes.
  4. Spread a thin layer of the turkey mixture in the bottom of the baking dish.
  5. Layer tortillas, turkey mixture, and cheese, repeating until all ingredients are used, finishing with cheese on top.
  6. Pour remaining enchilada sauce evenly over the top.
  7. Bake uncovered for 20-25 minutes, until cheese is melted and bubbly.
  8. Let rest 5 minutes before serving. Top with sour cream and green onions.

Notes

For added flavor, use fire-roasted corn and top with fresh cilantro or sliced jalapeños.
