Ground Turkey Enchiladas

Description

Cheesy and delicious enchiladas made with seasoned ground turkey, rolled in tortillas, and baked with enchilada sauce.


Ingredients

  • 1 lb ground turkey
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can enchilada sauce (10 oz)
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 8 flour tortillas
  • 2 cups shredded cheddar or Mexican blend cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a skillet, add onion and garlic, and cook until softened.
  3. Add ground turkey, season with chili powder, cumin, salt, and pepper. Cook until browned.
  4. Spread 1/4 cup enchilada sauce in the bottom of a baking dish.
  5. Spoon turkey mixture into tortillas, sprinkle with cheese, roll up, and place seam-side down in the dish.
  6. Pour remaining enchilada sauce over the tortillas and top with remaining cheese.
  7. Bake for 20 minutes, until cheese is melted and bubbly.
  8. Garnish with fresh cilantro before serving.

Notes

You can use corn tortillas for a gluten-free version. Serve with sour cream and avocado.
