Description
Cheesy and delicious enchiladas made with seasoned ground turkey, rolled in tortillas, and baked with enchilada sauce.
Ingredients

- 1 lb ground turkey
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can enchilada sauce (10 oz)
- 1 tsp chili powder
- 1/2 tsp cumin
- 8 flour tortillas
- 2 cups shredded cheddar or Mexican blend cheese
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a skillet, add onion and garlic, and cook until softened.
- Add ground turkey, season with chili powder, cumin, salt, and pepper. Cook until browned.
- Spread 1/4 cup enchilada sauce in the bottom of a baking dish.
- Spoon turkey mixture into tortillas, sprinkle with cheese, roll up, and place seam-side down in the dish.
- Pour remaining enchilada sauce over the tortillas and top with remaining cheese.
- Bake for 20 minutes, until cheese is melted and bubbly.
- Garnish with fresh cilantro before serving.
Notes
You can use corn tortillas for a gluten-free version. Serve with sour cream and avocado.
